Chefs ready for challenge

Introducing the Chefs for the Team Challenge at the Oceania Gas Salon Culinaire Competitions

The Team Challenge at the Oceania Gas Salon Culinaire Competition is exciting and nerve wracking for the Chefs. 

One mistake and their dreams of becoming the Junior and Senior Chef of the Year can be destroyed.

This year seven kitchens have entered teams, with each team made up of one Junior Chef under the age of 25 and one Senior Chef 25 years or older.  

The seven teams are from:  Saletoga Sands, Sinalei Resort, Tanoa Tusitala Hotel, Roko’s Restaurant, A.P.T.C, the Immaculate Café and Scalinis Restaurant.

The aim of the Team Challenge is for the two chefs to work together with the Senior Chef supporting and helping the Junior Chef.

The Team must make two portions of a soup and two portions of a main course.

At the start of the challenge a mystery box of ingredients is given to each team, (the same ingredients) and they have 20 minutes to develop their two-course meal with the ingredients.

They write out the recipes and the method they will follow to cook the dishes.  

Once this is done, they have one hour to make and present the two courses.

Fifty percent of the final marks are based on taste with kitchen hygiene, another 20 percent on presentation, organisational skills and innovation and creativity are worth 10 percent each.

This challenge puts the Chefs under considerable pressure, they need to remember and put in place all the culinary skills they have learned on the job and at cooking school, time management is very important, as is ensuring the taste of each course is excellent. 

Only the tough survive this challenge. 

The Team Challenge starts at 1.30pm on Saturday 29 October so come on over to Sheraton Samoa Aggie Grey’s Hotel and Bungalows and watch these talented Junior Chefs produce amazing food as they represent their village and place of work.
